The third DEMETER newsletter describes the main results and progresses DEMETER achieved in the first eighteen months of activities. Specific information about the improved fermentation process for enzyme production are provided, as well as about the Design of Experiment (DoE) approach which has been applied to this process and the results used to develop a mathematical model based on all the different variables and parameters present in it.
